Breakfast Burrito

We have quite a few Yukon Gold potatoes left over from Sundays crock pot dinner and I want to get through them before they take a turn for the worse. I opened up the fridge last night, scanned the shelves for something to eat with the potatoes. It didn't take long for me to figure out what I wanted to make for dinner. Jeremy teaches late on Tuesdays and Wednesdays so Espen and I are left to fend for ourselves. So what did I make? Breakfast Burritos!

Breakfast burrito for dinner, anyone?


So easy to make and SO good. I browned and seasoned the potatoes first and set them aside then scrambled up eggs, heavy cream and a ton of cheese. In about 10 minutes we were ready to chow down. We split a tortilla, I smothered mine in hot sauce and down the hatch they went. Espen is a pretty picky eater but he ate almost every piece of potato after devouring the eggs and tortilla. Seriously, you can't go wrong with a breakfast burrito.
